Yes, Dark Sun Gwyndolin makes Anor Londo dark once you kill her. But you can also make Anor Londo dark by killing the Gwyndolin illusion in the room aafter the bonfire you get to, after killing Ornstein & Smough
You attack gwynevere to make it dark, if you kill the optional boss it stays light.
It’s not bad game design Seamus. All you have to do is parry them. The game is punishing you for not using all of its resources. Although, not giving you a few silver knights beforehand to learn their moveset was a bit shortsighted.

you should use the Black bow of pharis. You have a lot of dex and with that you would be deadly with a fully upgraded black bow. It also has a lot more range than the other bows.

the optional boss in anor londo is right next to the bottom bonfire next to the big elevator if you have a certian ring the statue next to the bonfire will disapear and it wilaverse to be replaced by a fog wall which you can traverse to fight the boss
